No less than eight years did it take Dan Satandish to release his red wine The Standish The Schubert Theorem. As a result of hours of study and dedication, this winemaker—nowadays considered a true benchmark—managed to unravel each of the secrets of the Schubert vineyard. Here, on Roennenfeldt Road, in the south of Australia, he divided the area into six distinct plots, and one by one, he deciphered the composition of the granitic soils and the behaviour of the syrah. With The Standish The Schubert Theorem, once again, he demonstrates what he is capable of achieving with a variety that is the protagonist of some of the most popular red wines in Australia.
After such an immense effort, it is logical and expected that the work concludes with the utmost attention, meticulously caring for every detail in the production of The Standish The Schubert Theorem. It all begins with the harvest, where the best clusters grown on the region's granitic soils are handpicked from each vine; from there, The Standish The Schubert Theorem will be taken to the winery, where it will ferment with whole clusters in open fermenters.
