Pardas Sus Scrofa is a red wine produced by Celler Pardas, in Torrelavit, D.O. Penedès.
In 1996, Ramon Parera and Jordi Arnan start the Pardas project to produce the best wines possible from Can Comas, an abandoned farm with woods, fallow lands, dry land and pastures. Once the vineyards were in shape and balanced, in 2004 they make wine from their first harvest .
Finca Can Comas, located at 200-300 metres above sea levels, has a wide diversity of soils, and an irregular, mild and semi-arid Mediterranean climate.
Sustainable agriculture with little intervention is used to cultivate the vines (the winery calls is "non-cultivation): no herbicides, insecticides, nor synthesis products. They don't till the land to avoid erosion and they use spontaneous vegetation to protect it.
Pardas Sus Scrofa is made from Sumoll cultivated in two farms that have been planted for more than 60 years on clayey-calcareous and sandy soils.
Harvest is performed by hand. Destemmed and macerated at a controlled temperature. Fermented with local yeasts in stainless steel deposits at 20ºC. Aged in concrete deposits for 4 months.
