About Win 0.0 Espumoso Rosé

Approximately 20 years ago, around 2004, the Matarromera wineries conceived an idea. Why not produce a non-alcoholic wine? With this new beverage, the family-run company could appeal to a different type of audience, one not typically among their consumers. After several years of research and awaiting approvals from the European Union, the project received the green light with bodegas Win and their sparkling Win 0.0 Espumoso Rosé.
 
A meticulous maceration and a gentle extraction of the tempranillo and verdejo are the two key elements in crafting this non-alcoholic sparkling wine, where neither flavour nor aroma is compromised. This is achieved through a sophisticated dealcoholisation method that begins in the vineyard itself, always seeking grapes with a low potential alcohol content. This is crucial for obtaining the best possible quality in the next step, where the wine undergoes a molecular deconstruction process of its components through a system of rotating cones at very low temperatures, allowing the separation of aromas and alcohol.
