About Rimarts Uvae

While it is true that sparkling wines have always been associated with celebrations, for years producers have been going to great lengths to disassociate their products from particular seasons or events. Each sparkling wine has its moment and, while a young wine promises joy and fun, a long-aged wine gives you the calm vibe you need for the perfect pairing with elaborate dishes. Rimarts Uvae, an 80-month-old cava, has everything it needs to be the best companion for great dishes. Created by Rimarts, a small winery in the heart of the D.O. Cava, in Sant Sadurní d'Anoia (Catalonia), this is their longest aged wine. All the dedication you need to create the maximum expression of the terroir with a unique personality.

Founded by Ricard Martínez de Simón (the name of the winery is based on the first letters of these names), it has been managed by his two sons Ricart and Ernest since 1987, who have the same philosophy as their father. Artisan processes, long aging and traditional methods. Rimarts Uvae is a sparkling wine from the D.O. Cava made following the champenoise method. The base wine is a blend of Xarel·lo and Chardonnay and the second fermentation in the bottle is aged for a minimum of 80 months on its lees. Disgorgement is carried out in the traditional way, marking the date, and the dosage is done, like a good brut nature, with the cava itself.

So, thanks to its complexity and expressiveness, Rimarts Uvae is not only the perfect sparkling wine for great celebrations, but also the star of any event that deserves it. With more than 6 years in the cellar, it becomes the star of the table.



 

2011

Rimarts Uvae 2011 is a mature sparkling wine with complex aromas of stewed fruit accompanied by notes of toasted yeast and hints of pepper. On the palate it is elegant, complex and well structured. A very expressive cava with fine acidity, an unctuous mid-palate and a very long and pleasant finish.
