About Dominio del Bendito Las Sabias

Dominio del Bendito Las Sabias is a red wine from the DO Toro crafted by Dominio del Bendito, the venture initiated by Antony Terry in 2004 with the aim of reviving the most authentic expression of the vineyards in Toro.
 
The grapes for Dominio del Bendito Las Sabias are sourced from the La Jara plot, one of the winery's most distinctive vineyards. Here, vines over 50 years old thrive, planted on their own roots without grafting, remaining untouched by phylloxera. This exceptional viticultural heritage, combined with the character of the land, allows for the production of grapes with remarkable concentration and depth.
 
La Jara is situated at approximately 700 metres above sea level, with soils dominated by sand and pebbles, embodying the austere landscape that characterises much of Toro. Harvesting is done manually, and the grapes undergo selection before vinification begins. Fermentation takes place in stainless steel and concrete tanks, adhering to a philosophy of minimal intervention to preserve the fruit's and vineyard's character. Subsequently, Dominio del Bendito Las Sabias spends over a year in French oak barrels, where it develops new aromatic layers and refines its structure. The ageing process imparts spicy, toasted, and smoky nuances that complement, without overshadowing, the fruity character of the tinta de toro.
 
Dominio del Bendito Las Sabias is, above all, the expression of an exceptional vineyard. A profound and structured wine that highlights the character of the old vines of La Jara and showcases the full potential of tinta de toro when the terroir is allowed to speak.
