César Márquez, born and raised among vineyards, inherited his love for wine from an early age. After working with his uncle, the renowned oenologist Raúl Pérez, in 2017 he took over his family's winery, Castro Ventosa. Concurrently, he began crafting his own wine in a restored early 19th-century winery. His focus on quality and the expression of each parcel has earned his wines recognition and appreciation from critics. César Márquez Valtuille is a red wine that truly reflects the balance between tradition and avant-garde. It is crafted from a unique blend of Mencía, Garnacha, Bastardo, and a touch of white grapes sourced from a vineyard over a century old, situated at an altitude of 510 meters, where the sandy soils impart elegance and finesse.
The must ferments spontaneously, without additives, in 1,000-litre vessels with 30% whole clusters. The grapes are gently trodden to preserve some whole berries, and during maceration, a daily manual pigeage is performed without breaking the cap. This meticulous process continues with the bleeding, pressing, and settling of the wine before it is placed in 500-litre barrels for 12 months.
