Allegrini Palazzo della Torre, an iconic wine from the Allegrini winery, is born from the fusion of tradition and expertise. Crafted in the heart of Valpolicella (in Veneto), this red is the epitome of a wine with body, depth, and unique elegance, making it one of the most admired and a true gem of this region.
The process begins in September, with the harvest, when grapes are collected from the vineyard near Villa della Torre, an oenotourism complex acquired in 2008 by Marilisa Allegrini, in Fumane, at the very heart of Valpolicella Classica (20 km from the centre of Verona). Of the yield gathered from the field, one portion goes directly to the winery (where it is pressed and fermented to obtain the base wine); another part is sent to the drying rooms, where the grapes undergo a three to four-month drying period. This process, known as appassimento, is typical of the area and aims to increase the concentration of sugars in the grapes. Traditionally, this task was carried out in private attics and sheds. Nowadays, the production volumes of large companies lead to much more impersonal and large-scale production.
Months will pass until January, when the moment arrives for the dried grapes to be pressed and fermented with their skins. From this fermentation, another batch of wine will emerge, which will be aged. However, far from being the end, the process continues. And here is where the intrigue lies: to the skins and pomace of the second wine—which still contain residual sugars—the base wine (the one that fermented first) is added, and with this, Allegrini Palazzo della Torre is achieved, an emblematic wine that has brought international fame to Allegrini.
