Wines aging in concrete or cement tanks
Wines with purer flavours
Cement or concrete is porous, which allows wines to gradually oxygenate, so a well made concrete vat gives the same results as an excellent oak vat, but concrete, being neutral, leaves no mark and results in wines with purer flavours.
When we think of cement or concrete, we think of a group of workers constructing large buildings. However, for some time, wines aged in cement tanks are gaining popularity over wines aged in barrels.
Stainless steel tanks are also neutral but concrete is more insulating and has the ability to keep wine at a stable temperature during production. Inside these tanks everything happens in a more stable way and without sudden changes, which benefits the yeasts during fermentation and the wine during aging.
Another characteristic of this type of vat is that you can use aggregate materials that are part of the environment where the grapes are grown. A nice way of completing the natural cycle and including a unique identity and personality in the winemaking process for each wine.
If you are looking for neutral wines, with purer flavours and where the organoleptic characteristics of the grapes and the terroir stand out, cement or concrete tanks are excellent allies for this.
