About Springfield Estate Special Cuvee Sauvignon Blanc

Springfield Cuvee Sauvignon Blanc is a barrel-fermented white wine made by Springfield Estate in the Western Cape South Coast region (South Africa), with the Sauvignon Blanc variety.

Springfield Estate is a family winery located in the famous Robertson Valley mountain range (Western Cape, South Africa). An exceptional wine region with the perfect soils and climate to produce a high quality grape. The project is currently run by the Bruwer brothers, direct descendants of French Huguenots who arrived from the Loire in 1688 to settle here. Using the motto “made with honour” they produce honest wines that are a direct reflection of the variety of terroirs that have been cultivated generation after generation.

Springfield Cuvee Sauvignon Blanc is made from vineyards with an average age of 30 years old. These are strains planted in soils with rocky sand formations. Using traditional cultivation with an average yield of 6,000 kg per hectare, the grapes are harvested at night in two phases. Some are collected when they are just ripe and the rest a little later.

Under the premise of minimal intervention, the Springfield Cuvee Sauvignon Blanc grapes make their way through the winery using a gravity flow system. Fermentation takes place with whole grapes for 18 days and with native yeasts. They then spend 100 days in contact with their skins. Finally, the wine is bottled with little CO2 and minimal filtration.

Springfield Cuvee Sauvignon Blanc is a white wine that produced with a philosophy of minimal intervention in the unique Western Cape terroirs. The result is a complex wine with a charming mineral finish.
2017 Springfield Cuvee Sauvignon Blanc 2017 is a creamy white wine with complex aromas of passion fruit, fresh herbaceous notes and pleasant mineral touches. On the palate it starts off fresh, fruity and vibrant. The finish is lingering and very mineral.
