About Shannon Vineyards Mount Bullet Merlot

The Elgin Valley, 45 minutes from the city of Cape Town, is one of the regions with the greatest winemaking potential in the world. In the 1980s in this old district, known for its apple and pear crops, experimental vines began to be planted that finally, 40 years later, have yielded high quality wines. One of these wines is Shannon Vineyards Mount Bullet Merlot, a red wine made by Shannon winery.

Their 3 hectares of vineyards, divided into 5 different plots, grow on the slopes of the mountains above the Peninsula Dam. There, at a certain altitude above sea level, the climate is cold and cloudy with quite a lot of rain. This results in late ripening, low pH and high natural acidity. Once harvested, the grape bunches used to make Shannon Vineyards Mount Bullet Merlot are cooled before being destemmed and sorted by hand on a conveyor belt. After that, the grapes are cold macerated for 3-6 days to extract all the essence and aromas of the Merlot, and fermented naturally with native yeasts. During this process (which will last several days), two pump-overs will be performed daily.

Finally, once the process is complete, Shannon Vineyards Mount Bullet Merlot is transferred to new and used oak barrels (fine grain and medium toast), where it will undergo malolactic fermentation and be aged for 20 months.

2017

Shannon Vineyards Mount Bullet Merlot 2017 is a richly concentrated red wine. The bouquet is intricate, exuding aromas of ripe red fruits (plums, dark cherries), earthy undertones, and mineral accents. On the palate, it is captivating, with supple, well-integrated tannins. The elegance is remarkable. A vibrant and delectable acidity imparts a refreshing character. The wine is lusciously layered with flavors of plum cake, blackberry reduction, blueberries, cherries, chocolate, and herbs. It possesses a significant aging potential.
2016

Shannon Vineyards Mount Bullet Merlot 2016 is a concentrated red made from Merlot. The nose presents aromas of ripe red fruits (plums, dark cherries) with subtle hints of flowers, oak and minerality. The palate maintains good acidity and freshness, with medium body, well-integrated, silky and elegant ripe tannins. On the palate it reveals bitter chocolate, herbaceous notes and a long, grippy finish.
