About Pol Cochet Brut Blanc de Blancs
When one delves into the secrets of a historic winery, it often becomes evident that the essence does not lie in magical recipes or well-guarded tricks. What almost always makes the difference is something far simpler: an exceptional human team behind each bottle. This is precisely the case with Pol Cochet, a Champagne house with a familial soul and deep roots in winemaking tradition.
The story begins with a pivotal moment in 1875. Although initially a maison négociant, everything changed when Pol Cochet, son of Étienne, decided to cultivate his own vineyards and produce his own wine. Since then, the winery has undergone constant evolution without losing its essence. Today, the sixth generation, represented by Éric Petitjean, is at the helm, accompanied by the oenologist Jean-Pierre Valade, a figure of great renown in Champagne, known for spearheading the revolution at the house of Jacquesson.
But what exactly is Pol Cochet? It is a "Récoltant-Manipulant," a category not everyone can claim. This means they cultivate their own grapes and produce the wine themselves, without intermediaries. It is a guarantee of authenticity, total process control, and uniqueness in each cuvée.
Although the headquarters remain in Épernay, the heart of Champagne, much of the production takes place in the Côte des Bar, to the south, a region increasingly appreciated for its fresh and precise expression of terroir. The winery manages over 6.5 hectares distributed among some of the most coveted municipalities in the region: Ambonnay, Épernay, Le Mesnil-sur-Oger (all Grand Cru), as well as select plots in the Côte des Bar.
Among their wines, the elegant Pol Cochet Brut Blanc de Blancs stands out, a champagne crafted entirely from chardonnay grapes, hand-harvested at their optimal maturity. The vinification follows a classic and meticulous approach: complete pressing of the harvest, fermentation in stainless steel tanks at low temperatures, and a three-year maturation on lees, which imparts finesse, structure, and complexity.
