About Lautus Savvy Red

The oenologist Reg Holden had been immersed in the world of wine for over a decade when his wife became pregnant with their first child. Faced with this new chapter where alcohol had to be set aside for a greater cause, Holden decided to venture into the production of a non-alcoholic wine that retained the full flavor and distinctive character of its traditionally fermented counterpart. Thus, in the heart of South Africa, specifically the Coastal Region, the Lautus winery was born, becoming the cradle and launching pad for high-quality de-alcoholized wines such as Lautus Savvy Red.

Lautus Savvy Red is a blend of syrah, cabernet sauvignon, and pinotage, harvested from various vineyards across the Coastal Region. It is at this stage that the magic of this red begins, as not all grape varieties are harvested simultaneously: some are picked early to maintain a high level of acidity, while others are harvested later to achieve a greater degree of ripeness. It is this meticulous process that ensures the impeccable balance of Lautus Savvy Red.

The intention is to preserve this unique character in the winery, where vinification hinges on two key principles: on one hand, the gentle handling of both the must and the wine to avoid the extraction of harsh tannins; on the other, the practice of twice-daily pump-overs to enhance color extraction. Fermentation takes place in vertical fermenters at temperatures ranging from 26°C to 28°C. Subsequently, the wine is aged in oak barrels for a period of 9 to 12 months. Finally, Lautus Savvy Red undergoes de-alcoholization through the use of spinning cone technology at low temperatures and under vacuum conditions. First, the flavor is extracted, then the alcohol is removed, and finally, the flavor is reintroduced to the wine.
