About Boris Champy Savigny-lès-Beaune Petit Aigle
With a football team in an established league, brimming with top players and historic teams, you have all the conditions for the team to thrive. Although the competition is fierce, you know your place is secure. In contrast, forming a football team in a place where football isn't as popular and people don't expect great achievements is far more challenging. The same applies to wine. Producing wine in the renowned regions of Burgundy guarantees some recognition, but doing so in a lesser-known area like Hautes-Côtes de Beaune demands much more effort. Here, fame alone isn't enough; you must carve out a niche, prove that you have something special, and that this land, despite its anonymity, holds great potential.
When Boris Champy, formerly technical director at Maison Louis Latour and manager and winemaker of Clos des Lambrays, chose to work on his estate in Nantoux, in Hautes-Côtes de Beaune, he knew he had to demonstrate that this land had something unique. Particularly because he saw that with higher altitudes, these lands were shaping up as the future in the face of climate change. With a philosophy grounded in biodynamic viticulture and principles of regenerative agriculture, Boris works tirelessly to ensure that his wines capture all the potential of these often overlooked lands, which, under his care, reveal their true potential.
Boris Champy Petit Aigle Savigny-lès-Beaune is a clear example of this commitment. This single-varietal Pinot Noir wine, crafted from grapes grown on the highest hills of Savigny-lès-Beaune, is cultivated in clay-iron soils under biodynamic principles and hand-harvested. Then, in the winery, the grapes are destemmed and spontaneously fermented in oak barrels and finally aged in these same vessels for about 12 months.
As a result, Boris Champy Petit Aigle Savigny-lès-Beaune is a tribute to quality and patience. A fine, fresh, and elegant wine that demonstrates that Hautes-Côtes de Beaune is a brilliant contender in the wine world.
