If there is one thing that stands out about Hautes-Côtes de Beaune, it is its altitude. This region of Burgundy (France), previously little known, is now beginning to gain the recognition it deserves, and climate change has turned it into one of the great promises for viticulture. And who better than Boris Champy to understand this. With years of experience in prestigious wineries in Napa Valley and Burgundy, Boris decided to invest in this area, still in the process of gaining recognition, knowing that the potential here is immense.

Boris Champy Bourgogne Hautes-Côtes de Beaune Bignon 421 is a true reflection of that commitment. The wine comes from a parcel called "En Bignon," situated at an altitude of 421 metres. A cool location, ideal for producing refined wines, proudly displayed on its label and name. Pinot noir vines planted on red clay soil and cultivated under a holistic approach that envisions a global ecosystem with regenerative agriculture and an absolute respect for the environment. The grapes are hand-harvested at their optimal ripeness, and vinification is done with 50% destemmed grapes, fermented in oak barrels, which imparts a special smoothness. After fermentation, the wine is aged for 12 months in barrels, 25% of which are new 500-litre barrels, to enhance its complexity.
