Discovering La Salada with Toni Carbó

Upon arriving at Les Parellades, a quaint neighbourhood in El Pla del Penedès (Catalonia), the silhouette of Toni Carbó can already be seen in the distance, perched atop his tractor. Here, in Penedès, recent rains have been abundant, the grasses grow vigorously everywhere, and the work, as Toni himself says, never ends. What better way to introduce ourselves to La Salada!


To truly understand his project, there is no better way than to hop into his van and be taken to the origin of it all: the vineyard that his grandparents once cultivated. Although the rains have left the paths challenging and the grasses are unruly, arriving at the farmhouse of Cal Ton de La Salada is like taking a journey back in time. It was here that his grandfather was born, and here his ancestors worked the vineyards of the "Señor." The landscape is breathtaking, but among all the vineyards, some stand out for their wild beauty: Toni's. As he himself says with a smile: "mine are the ones with the most weeds."

Toni does not define himself as biodynamic, although he shares many of its values. He prefers to speak of connection, of a genuine bond with the land. For him, having to buy preparations or follow regulations that distance him from direct contact with the vineyard makes no sense. His way is to be there, every day, as his grandfather and father did. Because Toni believes in the vineyard, not in labels. And that is why he personally tends to the 23 family hectares and 3 more belonging to friends and neighbours.

Ecological vineyards cultivated with respect and sensitivity, and wines crafted with minimal intervention, always striving to express what the land has to say. These are natural wines, deeply connected to Penedès, yet not bound to any denomination of origin. Toni desires wines that are free, that breathe authenticity and reflect the soul of La Salada.

Although this project is profoundly personal, Toni is not new to the world of wine. His entire life has been intertwined with the vineyard; he grew up among vines, studied at an agricultural school designed for the children of pagesos (farmers, in Catalan), and together with his friend Ramón Jané, created the Mas Candí project. But it was a glass—more precisely, three—that changed his life: a wine from the master of Catalan natural wines, Laureano Serres. The first glass puzzled him, the second intrigued him, and the third captivated him. Since then, he has not stopped researching, reading, asking... seeking.


One of his great inspirations was La Dive Bouteille, a natural wine fair near Saumur (France), considered one of the most important in the world. There he found no suits or grandiose speeches: he found passion, land, and genuine conversation about vineyards, not marketing.

Toni continues to experiment and takes it a step further. Today he is developing blends directly in the vineyard, planting different varieties in the same plot to vinify them together. A venture born from his essential philosophy: everything is in the vineyard.

And this is how Toni crafts his wines: unique, authentic, different. From the content to the container. Each label, each name, speaks of a moment, a story, an emotion experienced. For La Salada is not just wine. It is a way of being in the world.
