About Avignonesi Desiderio Toscana
The Chianina breed of bull is among the oldest and most prestigious cattle breeds in the world. Originating in the Chiana Valley in the Tuscany region, it is renowned for its impressive size, being one of the largest cattle breeds. At the end of the 19th century, Avignonesi, the Italian winery now recognised as the largest biodynamic winery in Italy, housed an imposing Chianina bull named "Desiderio". This bull weighed a staggering 1600 kilograms and became the estate's main attraction. Such was the affection it garnered that even today a wine is produced bearing its name.
Part of the IGP Toscana, Avignonesi Desiderio Toscana is crafted from the Merlot variety, sourced from vines cultivated using biodynamic methods. The harvest is done manually, and in the winery, vinification is carried out by parcels, thus preserving the specific characteristics of each. The grapes are meticulously selected, destemmed, and then gently crushed. Maceration and fermentation occur with native yeasts in temperature-controlled stainless steel tanks. Malolactic fermentation takes place during the initial months of ageing in French oak barrels, followed by 18 months of ageing in barrels and at least another 6 months in the bottle.
Although the figure of this bull dates back over a hundred years, thanks to the label of Avignonesi Desiderio Toscana, it has become a symbol of Tuscany. A robust and voluptuous red wine that captures the essence and the imposing spirit of the region, which has been celebrated worldwide.
