Annually, as summer concludes, the natural instinct of European storks guides them to Africa. However, an increasing number of adult birds are opting to shorten their journey and spend the winter in Spain. Given the relatively mild climate, they nest and breed in elevated locations such as towers, belfries, and treetops to shield themselves from predators. They can be readily found in small communities with agricultural fields, meadows, and lagoons, which provide the diverse prey that constitutes their diet. At Raimat, an estate situated in the province of Lleida (Catalonia), they feel quite at home. This estate, acquired and rebuilt in 1914 by the Raventós family (owners of Codorníu), is renowned for practising sustainable viticulture, minimising the use of chemicals, reducing pollution, and optimising production methods. Features that this amiable and sociable bird appreciates on a daily basis.
Being a regular sight in the landscape of Raimat, it is unsurprising that the winery has crafted a wine named Raimat El Niu (“the nest” in Catalan). This white wine from the DO Costers del Segre is composed of chardonnay, albariño, and xarel·lo varieties. The grapes are sourced from three distinct vineyards, cultivated under ecological principles and certified by the international entity Bureau Veritas. Harvested at night to prevent oxidation, each variety is vinified separately. Fermentation takes place in stainless steel tanks with native yeast at a controlled temperature (16-18°C). Afterwards, the wine is aged on its lees for approximately 4 months and subsequently in French oak barrels for 9 months. Finally, the expert decision of the winemaker determines the final blend.
Three distinct varieties treated separately to achieve a common goal: to obtain freshness and fruitiness with a subtle hint of oak. Such is Raimat Niu, a wine perfect for enjoying the summer and ideal for shortening the winter.
