For this exclusive blend, the winery selects grapes from renowned crus such as Cramant, Avize, Aÿ, Ambonnay, Mailly, and Dizy. The vineyard is situated on deep chalky and porous soils that act as a natural sponge, absorbing water during rainy periods and providing the roots with a steady supply of minerals and moisture.
For the creation of Perrier-Jouët Belle Epoque Rosé, the maison adheres to a meticulous process. After hand-picking, the grapes undergo gentle pressing to extract only the highest quality must. To achieve its characteristic rosé hue and aromatic richness, a portion is vinified through maceration with the grape skins, where pigments and aromas are concentrated. The alcoholic fermentation is conducted in stainless steel tanks at controlled temperatures. This is followed by malolactic fermentation, imparting smoothness, stability, and a silkier texture to the base wine. After the blending of the varieties, the champagne is bottled for the second fermentation and aged for a minimum of 6 years in the maison's dark cellars on its fine lees, the inactive yeasts that bestow complexity and creaminess before its final disgorgement.
