Born in Villarrubia de Santiago (a village in Toledo), this red wine is the purest expression of Castilla La Mancha. The García de Lara family has been making wine and cultivating vineyards in this village for over a century (more of the latter than the former). Depending on the era, winemaking has come and gone; however, vineyard cultivation has always remained in the family, come what may. Now, the latest generation is determined to revive all the traditions. They do so with intriguing wines such as Garcia de Lara La Cueva Colorá Cencibel, named after the cave located within the 5.47 hectares where this red wine is cultivated. Specifically, this grotto is red, like the rest of the soils in the area, where lime and silt are mixed.
The old vines, planted in 1960 by the current generation's grandfather, are in full production, offering high-quality clusters. Garcia de Lara La Cueva Colorá Cencibel is harvested manually in late September, using boxes to ensure the grapes reach the winery in the best possible condition. Once at the Villarrubia de Santiago facilities, Garcia de Lara La Cueva Colorá Cencibel is destemmed and gently crushed. This harvest paste is placed in a tank to macerate cold for about four days. After this period, the native yeasts spontaneously begin to work in the stainless steel tanks. In this same container, Garcia de Lara La Cueva Colorá Cencibel undergoes malolactic fermentation, preparing it for aging in barrels and in bottles.
