On the palate, it is direct, nimble, and surprisingly long, with a natural acidity that imparts liveliness and a pleasant saline sensation. The fruit re-emerges over a mineral profile reminiscent of stone and the granitic landscape from which it originates. About El Hato y el Garabato Ecléctico Fermentado en Barrica

What happens when a wine chooses to be unlike any other? In Arribes del Duero (Castilla y León), where the landscape is fractured by canyons, granite, and slate, El Hato y el Garabato does things its own way: small vineyards, local grape varieties, and a method of working that allows each plot to retain its character.
 
Behind the project are José Manuel, Liliana, and Luisfer, three paths that converged around a shared vision: to restore and nurture a viticultural heritage that had almost vanished from the map. They cultivate just eight hectares spread over more than twenty plots, with vines aged between 80 and 120 years, farmed organically. Here, diversity is not just rhetoric; it is intrinsic to the landscape and the history of each village.
 
El Hato y el Garabato Ecléctico Fermentado en Barrica is born precisely from this abundance. It is crafted from rare local varieties, some almost extinct in the market (have you heard of the variedad punto en cruz?), and is allowed to ferment spontaneously before resting on its lees for eight months. The result is a white wine with character, texture, and a depth that gradually unfolds, evoking the sense of discovering something not designed to fit into a category, but to narrate its origins.
