Palo Cortado wines hail from the Andalusian regions of Marco de Jerez and Montilla-Moriles. They are wines characterised by their mahogany tones, a dry and elegant palate, and notes of hazelnut in their aromas. Palo Cortado wines are situated halfway between the delicacy of the Amontillados and the roundness of the Olorosos. While it is true that there is no single form of regulatory production, some consider Palo Cortado wines an art form in themselves.
