Werlitsch Vom Opok Sauvignon Blanc is a natural Sauvignon Blanc white wine produced by Weingut Werlitsch in the Weinland Österreich denomination in Styria, Austria.
The clusters used to make the Werlitsch Vom Opok Sauvignon Blanc wine come from vineyards with soils composed of limestone marl (Opok) that are worked according to the principles of biodynamic agriculture. The grapes are pressed and macerated with their skins for a few days and then alcoholic fermentation begins in large open tanks with native yeasts. The resulting wine is left to age on its fine lees for two years in large wooden vats and is finally bottled without adding sulphites.
The two wines in the Opok series produced by Ewald Tscheppe in Weingut Werlitsch are a perfect and somewhat challenging introduction to biodynamics even for the inexperienced; They are also a journey towards the wines made by their ancestors. The Werlitsch Vom Opok Sauvignon Blanc wine is also a great way to discover the Sauvignon Blanc from southern Styria, which, alongside the grapes grown in the Loire Valley, are considered the best because the local terroir is perfect for the variety to develop an interesting mineral character.
