Lenny Recanati, an Israeli with Italian roots, made his dream come true when he set up a winery in the Hefer Valley (Galilee) using the latest technology. He employed winemaker Gil Shatsberg and together they make world-class wines according to Jewish dietary requirements.
Recanati Cabernet Sauvignon Reserve comes from vineyards on the slopes north of Galilee. These vines are planted in rocky and porous soil where the cold climate perfectly nourishes the noble Cabernet Sauvignon variety. The vines are cultivated using conventional agriculture and the harvest is carried out at the optimum point of ripeness.
In the winery, the Recanati Cabernet Sauvignon Reserve is vinified under Kosher certification. This means all the machinery can only be used to make these wines and all the ingredients must also be suitable for the Jewish community. Following fermentation, the wine is aged for 15 months in French oak barrels.
