Pierre Gerbais Champ Viole is an extra brut sparkling wine -notably dry- (less than 6 g/L of residual sugar). On the nose, it exudes a crisp freshness, with hints of fruit (citrus, apricot). About Pierre Gerbais Champ Viole
The lieux-dits are plots of land with distinct characteristics that inevitably influence both the vineyards and the wines that originate from them. Their unique traits and history render them special and inimitable estates. In France, particularly in Burgundy, there are over 1,015 lieux-dits whose traditions are orally passed down from generation to generation. These plots are also found elsewhere in France. In the Côte de Bar, in the northwest of the country, within the A.O.C. Champagne, lies the department of Aube. There, in the village of Celles-sur-Ource, is Champ Viole, a lieu-dit where exceptionally distinctive sparkling wines are born. This particular site, historically chosen by monks from religious congregations, is situated at the heart of a south-facing slope with vines over 50 years old, where quality is prioritized over quantity. It is a true gem in the cold and damp northern France (considering that Aube is the southernmost and warmest area of the appellation). To this location, Aurélien Gerbais, the current winemaker of Pierre Gerbais vineyards, travels to craft Pierre Gerbais Champ Viole.
More than a conventional winery, Pierre Gerbais is a family venture of the Gerbais family, whose story began in 1910 when brothers Ulysse and André devoted their lives to viticulture. They were among the few in the village to engage in winegrowing, as the majority of the population found their livelihood in the railway industry. This marked the foundation of the family saga, which now extends to the fourth generation and encompasses 18 hectares (all within the A.O.C. Champagne). Their secret, besides a passion for their craft, hinges on two points: the first and foremost being a consistent reinvestment in the business, annually expanding their vineyard parcels; the second is the aspiration and drive to progress and improve. Indeed, the Gerbais brothers, along with other local vignerons, were pioneers in acquiring a wine press so that the business would not rely on the sale of grapes to large producers, thus becoming one of the first domaines to craft their own champagnes.
The savoir-faire is not an issue for this enterprise. Harvesting is always done by hand, selecting only the highest quality clusters. After crushing and pressing (using a traditional champagne press), the must of Pierre Gerbais Champ Viole is transferred to stainless steel tanks where it undergoes alcoholic and malolactic fermentation. Following this, Pierre Gerbais Champ Viole is bottled and laid to rest for 36 months to encourage the secondary fermentation in the bottle (where it also ages on its lees). After disgorging, carried out in April 2021, -and with a very limited production- Pierre Gerbais Champ Viole is at its optimal point for tasting.
