About Moulin de Gassac Sauvignon Blanc
More and more winegrowers these days are deciding that joining a denomination of origin will mean they lose freedom to innovate and experiment. That is why when Aimé Guibert, owner of Mas de Daumas Gassac, discovered that he had the perfect soils for growing grapes, he decided to stick with making “vin de pays” to leave room for creativity. Considered an anarchist for not relying on new technologies, he uses the varieties that each of his wines really need and, working as the peasants used to, he has managed to change the image of a region of wines that were considered low quality. With some distinguished and complex wines, he has improved the Languedoc area and confirmed that the quality of a wine is much more valuable than the label that describes it.
Among the wide range of wines released by this visionary winery, Moulin de Gassac Sauvignon Blanc is a single-variety Sauvignon Blanc grown in sandy soils covered with pebbles from the Hérault River. They are cultivated using environmentally friendly agriculture and the harvest is carried out manually when the grapes reach optimum ripeness. Then in the winery, they are selected, destemmed and gently pressed. The resulting must is fermented in stainless steel tanks at strictly controlled temperatures and finally the wine ages in steel tanks for 5-6 months.
With an exceptional terroir and a Mediterranean climate that makes Languedoc the perfect place for making and aging this type of wine, Moulin de Gassac Sauvignon Blanc is very fresh and deliciously floral. A wine free from restrictive labels with maximum fruity expression.
