Mahara Amorro Espumoso

“What we try to do is make wines that express the essence of Cádiz. If you put it in a French cask, it will be a different kind of wine, it won't be from Cádiz.” This is how José Gómez, one of the two members of Bodega Vinifícate, explains the basis of the project that was set up in 2011. Together with his brother Miguel, he is obsessed with making each wine reflect the terroir it comes from, in San Fernando, in Cádiz (Andalusia). Their work philosophy is to try to create wines that speak of the south, made in the most traditional way possible; so they use vines of native varieties like Palomino or Tintilla de Rota, planted in the area’s typical albariza soils.

Mahara Amorro Espumoso is a sparkling wine made with the area’s leading variety, the Palomino, from two vineyards located in the town of Chiclana de la Frontera, one on sandy soil and the other on albariza (marl and limestone rock). The vines are cultivated using respectful agriculture, avoiding chemical products and instead always using organic treatments that will not harm the environment. This sparkling wine is made in the winery using the ancient method. To begin with, the must is fermented with native yeasts in small 1500L stainless steel tanks and, before the process is finished, it is bottled to produce the bubbles. Finally, the wine rests on its lees for 18 months.
