About François Carillon Bourgogne Chardonnay

François Carillon Bourgogne Chardonnay is a monovarietal Chardonnay white wine from the AOC Bourgogne, produced by Domaine François Carillon.

Domaine François Carillon is a winery that has its origins in the sixteenth century. It is one of the most prestigious wineries in Burgundy. It has succeeded in getting its wines included on the menus of the world’s most award-winning restaurants.

François Carillon Bourgogne Chardonnay comes from 5 hectares of vineyard with clay and calcareous soils. The vineyards are divided into two plots in Puligny-Montrachet and one in Mersault.

François Carillon Bourgogne Chardonnay is made following the traditional style. First, the whole harvest is pressed when it arrives at the winery. Afterwards, the must is cleaned by gravity for a few hours and then the alcoholic and malolactic fermentation takes place in oak barrels. Domaine François Carillon uses inert gases to protect the musts and wines from oxidising, and is thus able to reduce the doses of sulphites used during winemaking. Once finished, it ages in the barrel for 12 months and finally 6 months in foudres.

François Carillon Bourgogne Chardonnay is a wine with aromas of lime and peach, and on the palate it is full and balanced thanks to the ageing to which it has been subjected, and has a wonderful acidity.
2015 François Carillon Bourgogne Chardonnay 2015 has a fresh and bright nose that reveals notes of apple with hints of citrus and white flowers. On the palate it is voluminous and lively, so it can be laid down for several years in the bottle if stored in optimal conditions.
