François Carillon Bourgogne Aligoté is a monovarietal Aligotéwhite wine produced by Domaine François Carillon and belonging to the AOC Bourgogne Aligoté.

Domaine François Carillon is a winery with a long winemaking tradition in Burgundy. Its origins date back to the sixteenth century. Due to the high quality of the grapes on its plots and its good way of working, it is considered one of the most prestigious wineries in the region, and has succeeded in getting its wines included on the menus of the most award-winning restaurants in the world.

The grapes for François Carillon Bourgogne Aligoté come from Puligny-Montrachet and Cropeau. They are grapes of the superior Aligoté Jaune Doré clone (golden yellow). The vineyards are over 60 years old and are found in plots with clayey and calcareous soils.

François Carillon Bourgogne Aligoté is produced by directly pressing the whole harvest when it arrives in the cellar. The must is subsequently cleaned by decantation and then placed in oak barrels where it undergoes alcoholic fermentation and malolactic fermentation. Lastly, the wine spends 12 months in French oak barrels and then 6 months in a foudre. Before bottling, depending on the vintage, the wine is filtered and clarified.

Domaine François Carillonprepares its wines using inert gases to avoid oxidising the must and the wines, and can thus minimise the sulphite doses in the wines.

François Carillon Bourgogne Aligoté reveals aromas of lime and spices. It is a very lively wine with citrus touches on the palate.
2017 François Carillon Bourgogne Aligoté 2017 has a pleasant and delicious nose with aromas of various fruit with white flesh, and with soft citrus and floral nuances. On the palate it has a good volume and intensity, with slightly fruity flavours. Its finish is attractive and dry.
