Finca La Fideuera

Finca La Fideuera is a cava from the Ars Collecta collection by Codorniu. Like so many other cavas, it is a single-variety Xarel.lo. 

The La Fideuera estate is one of these little hidden gems in Alt Penedès. Planted with north-south exposure more than 20 years ago, the vines grow on deep soil with good drainage and stony material. 

Finca La Fideuera is made artisanally, with grapes that have been selected previously for their quality. The harvest is carried out manually and at night, in small boxes to avoid damaging the berries. After arriving at the winery, the grapes are chilled and pressed pneumatically, leaving the must to rest in small tanks at a controlled temperature of 17ºC. 

After the corresponding production processes, the cava is bottled, staying there for more than 90 months at a constant temperature. It has a very limited production, hardly 300 bottles. This is what makes it such an exclusive cava.
