About Domaine de Pallus Le Coq de Pallus Blanc

Le Coq de Pallus Blanc is a biodynamic single-variety Chenin Blanc white wine produced by Domaine de Pallus in the AOC Chinon, in the Loire, France.

Bertrand Sourdais is a young winemaker who made a name for himself through his great work at wineries like Mouton Rothschild and Léoville-Las Cases in Bordeaux, Santa Rita in Chile, with Álvaro Palacios in Priorat and in Dominio de Atauta, in Spain. His experience in all these places gave him change to build his own reputation and reflect on the winemaking methods in his native Chinon. In 2003, he decided to return home to take over management of the Domaine de Pallus family winery.

Sourdais began working his vineyards according to the principles of biodynamic agriculture and completely rethought the processes used in the winery. He decided to use longer macerations, long and gentle elévages, and later bottling, unlike other local producers.

Le Coq de Pallus Blanc (Pallus Rooster) comes from plots lying on terraces halfway up a slope in the Pallus area where the vines are planted in sandy soils on clay. The grapes are pressed in whole bunches and fermented in barrels for three months. The wine rests for nine months in barrels and is bottled the following year.

An exquisite limited production of a white wine in a land of reds, where the careful cultivation of the Chenin Blanc variety allows it the rare opportunity to express itself in all its splendour.

2018 Le Coq de Pallus Blanc 2018 is a white wine with deep and intense aromas on the nose that are reminiscent of ripe fruits. On the palate it is complex and elegant. A full-bodied, creamy wine with an interesting mineral tension and a subtle saline note. Long and balanced finish that is full of freshness.
