About Champagne R. Faivre L'Aguerrie
Some champagnes should be tasted at least once in a lifetime. That is an undeniable fact. There is no room for negotiation. One of the bottles that should be included in the list of essentials is Champagne R. Faivre L'Aguerrie.
Since 1953 Champagne R. Faivre has been giving us a lot to talk about. Its founder, Robert Faivre, saw it clearly and, although he did not have the complete machinery, he chose to produce champagne as a cooperative. However, when something or someone is good, that is common knowledge, and the Faivre family knew that what they had on their hands was something much bigger. It was not until David Faivre (grandson and third generation of the family) that the decision was made to abandon collective production and opt for on-farm production, based on much more sustainable cultivation practices. This is how Champagne R. Faivre L'Aguerrie came about, an extra brut and reserve sparkling wine featuring a wide variety of plots from the Champagne A.O.C. . There are five in total: La Boudine, Les Champs Robin, Les Glises, Les Pointes and Les Trois Moulins. All these portions of land, located in the Dormans-Épernay-Reims triangle, are farmed organically, striving for the healthiest grapes possible. The continental influence (with cold winters) and the clay-limestone soils are the perfect mix that hardly needs to be modified, limiting the work of the winegrower to simply guiding.
The grapes are harvested by hand in small boxes (to avoid breaking the skins) and are quickly taken to the winery. Here each of the parcels will be worked separately under the supervision of the expert Richard Dailly. The key to all this is vinification in small tanks, where the base wines will undergo alcoholic fermentation and malolactic fermentation before bottling. Once Champagne R. Faivre L'Aguerrie is resting in the cellar, the yeasts will carry out the second fermentation in the bottle, forming the well-known bubbles of sparkling wines. After this time Champagne R. Faivre L'Aguerrie is disgorged, the dead lees are removed, and the expedition liqueur (also made in the same winery) is added.
False modesty leads us nowhere. And this is proven with Champagne R. Faivre L'Aguerrie. One of the best sparkling wines that has recently begun its path to success.
