In the vinicultural cosmos, where regulations often dictate the course, Casa Balaguer ventures to challenge the established conventions. Renowned for its steadfast dedication to local varietals, the winery astonishes by introducing an unexpected twist: the vinification of cabernet franc under the sun-drenched skies of Alicante (Spain). In a landscape where cabernet franc is a rarity, Casa Balaguer opts for innovation, and the outcome is nothing short of enchanting. So much so, that the wine born from this bold experimentation has led to the rechristening of the grape as "frankernet cab", a unique and Mediterranean expression of the classic vine.
For the crafting of Casa Balaguer Tomatierra, they utilize the 3 hectares of cabernet franc which they previously sold to other wineries. These grapes are organically cultivated, eschewing the use of chemicals that could harm the natural balance of the vine. Following a manual harvest in small boxes and a stringent selection process at the winery, the vinification involves four different types of vessels: clay amphorae, concrete, barrels, and glass demijohns. A spontaneous fermentation with indigenous yeasts is followed by aging for a period of 5 months in a meticulous combination of these various containers. Ultimately, the wine is bottled unclarified, unfiltered, and without the addition of sulfites.
