Not all sparkling wines can carry the name of the A.O.C.Champagne on their labels. This area of northwest France, perhaps one of the most renowned in the world, has its own very special and unique winemaking processes that are not found anywhere else in the world. Bonnet-Ponson Vignes Dieu Champagne Premier Cru Blanc de Blanc Brut Nature belongs to this select club of sparkling wines produced here, and is unique in the world for several reasons.

The first reason is expertise; the knowledge resulting from all the experience, history and years of winemaking carried out by the Bonnet-Ponson family, experts in viticulture and winemaking since 1862. Since then this maison has managed not only to maintain, but to increase the quality of all their sparkling wines, and that continues today with Cyril Bonnet (the sixth and most recent generation of the family) who has achieved organic certification and removed chemicals. This is the only way to maximise the character of this sparkling wine made with Chardonnay grapes grown in Les Vignes-Dieu, a completely unique Premier Cru in the Coulommes la Montagne area, in Reims (in the north of the denomination).

This plot, planted in 1962, is the second reason why Bonnet-Ponson Vignes Dieu Champagne Premier Cru Blanc de Blanc Brut Nature is unique, because this site is characterised by a wide variety of soils: sandy-clay, well-drained, shallow, pebbly and facing south-east.

Finally, the manual harvest, pressing (within the first four hours) and alcoholic and malolactic fermentation (in stainless steel tanks and barrels) are other reasons that help reinforce the authenticity of Bonnet-Ponson Vignes Dieu Champagne Premier Cru Blanc de Blanc Brut Nature. Aging on fine lees for 7 months, bottling (unfiltered and with less than 15 mg/L of sulphites) and subsequent aging for a minimum of six years in the bottle complete the character of this sparkling wine.
