In France, specifically in the A.O.C. Champagne they make some of the most special wines in the world. They are known as Perpetual Cuvées, which are reserve wines that the winery adds to from the vintage each year. Bonnet-Ponson Cuvée Perpétuelle Champagne Premier Cru Extra Brut Rosé is a sparkling wine that comes from the Bonnet-Ponson Cuvée Perpétuelle. This is one of the area’s most traditional houses that has been making sparkling wines in the Montagne de Reims (north of the denomination) since 1862. This site, classified as premier cru, is home to a great variety of soils including a mix of sand, silt, calcareous clay and scree, which bring life and are the home of the old vineyards, which are more than 35 years old, and grow Pinot Noir, Chardonnay and Meunier. The wine of the year is made from these three varieties and mixed with the Cuvée Perpetua reserve.

Beforehand, the white grape batch for Bonnet-Ponson Cuvée Perpétuelle Champagne Premier Cru Extra Brut Rosé ferments and ages on lees for 9 months in stainless steel tanks and oak barrels, while the red batch undergoes malolactic fermentation and ages in 400-litre barrels. Finally, Bonnet-Ponson Cuvée Perpétuelle Champagne Premier Cru Extra Brut Rosé is bottled (unfiltered and with a minimum dose of sulphite of 35 mg/L) and is ready to spend 3 to 4 years in the bottle, finishing rounding off before being released for sale.
