About Alceño Blanco Joven

Cryomaceration, also known as cold maceration, is a winemaking technique that involves keeping grapes at low temperatures for an extended period before fermentation. The individual responsible for popularising this technique was the oenologist Guy Accad, who achieved a much fruitier vinification, with intense aromas and flavours. This technique is very common in red wines, but there is nothing to prevent it from being applied to whites as well. Bodegas Alceño employs it with Alceño Blanco Joven
 
White wines may not be the most emblematic of the D.O. Jumilla, but this does not mean that amidst the rosés and reds (where Monastrell stands out), one cannot find a marvel like Alceño Blanco Joven, a true symbol of a new era. 
 
Historically, the wineries in this appellation focused on bulk wine production; however, from the 1990s onwards, some vintners decided to take a step further and bottle their creations. Bodegas Alceño belongs to this group, a true benchmark, and can also boast of being the first commercial winery in this southeastern Spanish denomination. This is quite a milestone, as not everyone possesses old vineyards, over 70 years old, in the highest areas of the D.O. Jumilla, which grow organically on calcareous and stony soils that retain water well. Thanks to these conditions, Sauvignon Blanc can withstand the dry and hot summers. All of them are cultivated organically. 
 
Finally, Alceño Blanco Joven is harvested and brought to the winery, where cryomaceration takes place. In this stage, before alcoholic fermentation, the temperature of the grapes is lowered to 10°C, thus weakening the cellular structures of the grape skins (where the polyphenols are found), releasing aromas, colour, and flavour. After being thawed, Alceño Blanco Joven begins to ferment and transforms into a remarkable white wine that you should not miss.
