Wipe out is a red wine made by Vinos Subterráneos with the Tempranillo variety and a small portion of other diverse grapes from Laguardia (Álava).
Vinos Subterráneos is the project of three friends (Khader Ahmad, Mateus Nicolau de Almeida and Gabriel Ameztoy) who, in 2010, decided to make and sell their own artisan wines from a single plot in Laguardia. In 2012 they moved into a hundred-year-old winery excavated in the ground and since then they have become independent producer winemakers.
All Wipe out grapes come from the same plot located in the heart of Rioja Alavesa classified as D.O.Ca. La Rioja. They are old strains between 30-50 years of age that are cultivated using traditional agriculture and in an environmentally-friendly way. Once the grape reaches optimum ripeness, the harvest is carried out manually.
When the grape reaches the winery, the Wipe out must ferments spontaneously with native yeasts in 500-litre open barrels in a semi-carbonic atmosphere. It then ages for 12 months in 225-litre French oak barrels and 6 months in stainless steel tanks. Once the wine is ready, it is bottled without filtering or clarifying.
Wipe out is a red wine made entirely in Laguardia with the intention of showing the full freshness and elegance of the terroir.
