Vouette & Sorbée Fidèle Brut Nature is a single-variety Pinot Noir “blanc de noirs” champagne that comes from three plots with Kimmeridgian calcareous soils that are cultivated according to the principles of biodynamic agriculture. The plots have been Demeter certified since 1998. The musts ferment and age in barrels for approximately 24 months before being drawn off into bottles. The resulting champagne is not filtered or clarified, it contains very low levels of sulphur and no dosage takes place, it is a brut nature.
