It cultivates its small plots of old vines - from 60 to 100 years old - biodynamically andorganically. The vineyards are between 760 and 1200 metres above sea level. It produces according to the principles of minimum intervention, fermenting with native yeasts, without oenological additives, or clarification or filtration, and uses little or no sulphite.

The vineyard plots for Vino di Anna Don Alfio Qvevri are cultivated organically and they are on the north face of Etna between 800 and 950 metres above sea level.
