Tuca Negra is a single-variety Garnacha variety red wine produced by Cuevas de Arom in the DOP Campo de Borja.

With a drive to get the best out of the Garnacha variety, the Bodegas Frontonio team set up their project in the town of Ainzón (Campo de Borja) under the name Cuevas de Arom. This is a new project that aims to cultivate the area’s oldest and most unique vineyards and, in collaboration with the Santo Cristo de Ainzón cooperative winery, revive the tradition of making wine underground in underground caves and using a wide variety of aging vessels.

The Tuca Negra grapes come from the Ainzón slopes. Specifically, from 14 hectares of very old vines lying 700 metres above sea level and characterised by having plenty of sun and little water. The yield is limited to 2,000 kilos per hectare. They use respectful agriculture and the harvest is carried out manually when the grapes reach optimum ripeness.

To make Tuca Negra, 20% of the stalks are included. Fermentation takes place with native yeasts with 2 cap plunges per day in open 5,000 kg tanks. It is then vatted and undergoes malolactic fermentation in concrete tanks. Finally, it ages for 15 months in French oak.

Tuca Negra is the result of a limited production microvinification. It is the top wine from this winery that makes high-altitude Garnacha wines underground.

The winery Cuevas de Arom is the new project of Bodegas Frontonio in Ainzón, Campo de Borja. Here, Fernando, Mario and Francisco, vinify old Grenache in the traditional way, with the aim of placing value on some of the oldest and most unique vineyards in the area. Their wines seek a more elegant profile with more freshness, thanks to a slighter extraction and less marked notes of the barrel.
For many years, Aragonese wines were used to strengthen weaker wines, both in Spain and abroad. However, in the past few years Araongese wines have managed to dramatically change this stereotype and their reputation in general. The D.O Somontano region lead this revolution during the 90´s with the cultivation of foreign varieties, but now other wine regions, such as the DO Campo de Borja, have discovered the extraordinary possibilities of one of its native varieties: Grenache, one of the most prominent varieties in Spain. It is not in vain that the DO Campo de Borja is considered "the queen of Grenache".
