Tissot En Barberon is a monovarietal Pinot Noir red wine from the AOC Côtes du Jura produced by Domaine André et Mireille Tissot.
Domaine André et Mireille Tissot is a winery in Jura run by Bénédicte and Stéphane Tissot. It was founded in 1962 and has been cultivating its 35 hectares of vineyard, certified organic and biodynamic, for years. The winery is one of the benchmarks in the area. In total it produces about 28 cuvées that seek to express the typicality of the grapes vinified and of their terroir.
The plot for Tissot En Barberon is a 1.8 hectare vineyard that is around 45 years old. It is cultivated as certified organic and biodynamic. The soils are calcareous on the surface and have marl from the Lias in lower layers. The vineyard faces east and west on the slopes of a hill.
Tissot En Barberon is vinified by vatting 60 % of the harvest whole, and the rest by destemming it. It macerates in truncated cone vats for about two weeks and then the wine is aged in new and second-use barrels. During the whole process, the minimum amount of sulphite possible is used.
Tissot En Barberon is a red wine with very limited production. Approximately 3,300 bottles are produced per year.
