Thomas Perseval La Masure is a biodynamic sparkling wine made by the young winegrower Thomas Perseval with the Pinot Noir and Chardonnay varieties in the AOC Champagne denomination in Champagne (France).
Domaine Thomas Perseval is located in the town of Chamery, in the heart of the Montagne de Reims natural park. This is a 2.5 hectare Premier Cru that was cultivated by Thomas's grandfather in 1970 and vinified by his father in 1980. In 2003, when Thomas Perseval took over, he focussed on natural viticulture and winemaking with the aim of achieving the best expression of the terroir.
Thomas Perseval La Masure comes from a mixture of the native Pinot Noir and Chardonnay varieties from a single plot (called Lieu-Dit in Champagne). These vineyards have been certified organic since 2012 and they are cultivated according to biodynamic principles. The work is completely manual and the harvest takes place at the optimum point of ripeness.
Thomas Perseval La Masure is a sparkling wine made using the traditional champagne method. Firstly, the must ferments spontaneously with native yeasts and is aged in 225 and 400 litre oak barrels for 8 months. It is then bottled without clarifying or filtering and a second fermentation takes place with 45 months of aging before disgorging. There is no dosage and only minimal sulphites.
Thomas Perseval La Masure is a cuvée that showcases the strength and character of a Premier Cru in its most natural state. A balanced, fresh and mineral champagne.
