D.O. Toro (Castilla y León)
Termes is a red wine produced by Bodega Numanthia, a winery located in the Toro region.
Termes is the youngest wine of the winery and is made using only Tinta de Toro (Tempranillo) grapes. The grapes are grown on vineyards which are between 30-50 years old planted at 700 metres above sea level on small plots between the municipalities of Valdefinjas and Todo, on the slopes of the river Douro.
The harvest is carried out manually when the grapes are of optimal ripness, where they pass through a rigerous selection at the vineyard.
As for the winemaking process, fermentation takes place for 8 days at a controled temperature of 26-28ºC, with battonages occuring twice a day. After, maceration takes place with the skins still intact for 21 days, with soft battonages occuring.
After fermentation, Termes is aged for 16 months in first year French oak barrels with racking occuring every 4 months.
