Sumarroca Gran Reserva Brut Nature is a cava produced by the winery Sumarroca in D.O. Cava.
This winery founded in 1999 is located in the municipality of Subirats (Barcelona)

Sumarroca Gran Reserva Brut Nature is a traditional coupage of the varieties Maccabeu, Xarello, Parellada and Chardonnay.
The grapes come from the vineyards of the farms Sumarroca and Sabartés. The soils of the first farm are calcareous, gravely and poor in organic matter. As for the farm Sabartés, located much further south of Penedès, has clayey and loamy soils. Its vineyards are also influenced by the ocean breeze thanks to the proximity of the sea.

As for the production, each variety is vinified separately. After a static settling process of 24 hours, the wine goes through a fermentation of 18 days at 14ºC.
Finally, the ageing takes place in stacks for 36 months.

Initially born with the name Molí Coloma more than three decades ago, the trajectory of Bodegas Sumarroca has been so meteoric that in a few years it has positioned itself as a reference intimately linked to the new winegrowing era of Penedés; more modern and cosmopolitan. A great team of professionals behind an innovative family, which has brought together the passion for the land, determination to cultivate it, tradition and innovative will, feelings and reasoning. At Sumarroca they work towards materialising its creator's philosophy: to improve the quality of production to achieve innovative wines and cavas, with character and balance.

Cava was born under the constant shadow of its French counterpart, Champagne. However, produced over 1,200km away and a gap of over 100 years, Cava was always going to be a completely different product, even if produced using the same method and and sometimes with the same varieties. Firstly the climate and soil have a profound impact on the yields, while the plant strains that thrive here and completely different to those in the Champagne region. Fortunately, as more winemakers are becoming convinced of this, they are producing Cavas with their own personality, showing off the art of the second fermentation in the bottle like no other wine region in the world.
