Son Negre is not just any wine. Son Negre is a special red wine. One of those things that happen very few times in life. Only once every few years. This wine, produced by the Ánima Negra winery, happens only every eight. As they say, sometimes the bad is plentiful and the good is scarce.

Son Negre is a single-variety wine made with Callet, which is native to the Balearic Islands and currently being recovered by young winegrowers. Generally speaking, it is quite a difficult grape to work with, with large production vines producing berries with light colouring and low alcohol content. However, things change with old vines, where the Callet is perfected and improved. At Ánima Negra, where they work with 34 hectares of their own vineyard and 75 hectares of rented land, the vines are around 80 years old, with a production of only 500 grams per vine, but of great quality. It is not easy to decipher the Callet, but at Ánima Negra they have succeeded.

In terms of the vinification process, Son Negre is harvested by hand in 10 kg boxes. After a first selection in the field, the Callet grapes are placed directly in a cold chamber, where they are kept overnight until they reach a temperature of 8ºC-10ºC. But this is not the end of the selection process. The next morning the best grapes go through a double filter: firstly, on a selection table, and then, with optical technology (where they are examined berry by berry). After this lengthy process, which leaves only the best grapes, Son Negre is moved into 4,000-litre French oak barrels by gravity, where it ferments at a controlled temperature using native yeasts. After this, Son Negre will spend 16 months in these barrels, where it will be softened and rounded thanks to the fine grain. Finally, the wine spends two months in cement tanks.

The Son Negre wine is only suitable for special occasions. And its presentation must match the quality of the wine, and so the label features exclusive designs by the artist Miquel Barceló. As the writer Robert Brault said, “there are exactly as many special occasions in life as we choose to celebrate.” Son Negre is the perfect choice for every one of them. After all, it’s the perfect excuse to celebrate anything.
