Sommos Crianza is a wood-aged red wine made by Bodega Sommos with the Cabernet Sauvignon and Syrah red varieties in the D.O. Somontano denomination, in Aragon (Spain).
Bodega Sommos is one of today’s most ambitious wine projects with a new building that has been described as “One of the Architectural Wonders of the Winemaking World”. The building is made up of geometric shapes with steel and glass finishes and is perfectly integrated into the 355 hectares of vineyards owned by the winery. High technology for a high quality.
Sommos Crianza comes from a vineyard in the Finca de Montesa with vines planted on loamy-sandy soils that are low in organic matter. The vines are cultivated using traditional agriculture with an average production of 4,500 kg / ha. The harvest is mechanical and takes place at night so the grapes reach the winery in the best possible condition.
When the Sommos Crianza grapes reach the winery, they pass over the selection table and vatting happens by gravity. Fermentation takes place at temperatures between 26º and 28º, followed by maceration for around 15 days for the Cabernet variety and 5 days for the Syrah variety. Malolactic fermentation then takes place in cement tanks and is aged in French oak barrels for a period of 6 months. To finish, the final coupage of the different varieties is made.
