Sextant Bourgogne Aligoté is a natural single-variety Aligoté white wine produced by the Sextant winery in the A.O.C. Bourgogne Aligoté , in Burgundy, France.

The grapes used to make the Sextant Bourgogne Aligoté wine come from the first plot that Julien Altaber bought in Puligny-Montrachet.

The vineyard has loamy clay soils and strains that are around 60 years old. The vines grow the ancient variety known as “Aligoté Doré”, which produces small clusters with orange and golden berries when ripe.

The grapes are harvested manually and taken to the winery in boxes. The grapes are then crushed and pressed directly and the resulting must rests in tanks for about 36 hours so that racking is more effective. Fermentation begins spontaneously and for as long as each wine requires. This can last from days to months, it can even stop with the cold of winter and start again when spring arrives.

Once alcoholic fermentation has finished, the wine goes through an aging process that, depending on the vintage, can last from six months to a year and takes place in used barrels that are between 5 and 10 years old.

Sextant is the personal project of Julien Altaber, a young winemaker from Mâconnais who works under the principles of biodynamic agriculture and produces natural wines with minimal intervention. Altaber says he is not trying to make a “Grand Vin”, rather, he wants to make honest and drinkable wines that promote coexistence, friendship and celebration.
