


SantYuste Paraje El Carrascal is a natural white wine made in jars with the Verdejo variety by Esmeralda García in Segovia (Castilla y León).
Esmeralda García is a Segovian who understands her family’s terroirs in the town of Santiuste de San Juan like no one else. After studying and working in different wineries, she followed her passion and began making her own wines. She grows pre-phylloxera Verdejo grapes that are vinified with minimal intervention to achieve the variety’s most authentic expression.
The SantYuste Paraje El Carrascal wine comes from vines lying at 840 metres above sea level, on a very well-protected plateau area. These are old vines planted in loamy-sandy limestone soil with lots of pebbles. They are cultivated using environmentally friendly agriculture, avoiding the use of pesticides and synthetic chemicals and the harvest is carried out manually at the optimal point of ripeness.
When the SantYuste Paraje El Carrascal grapes reach the winery, they are directly pressed and not racked. They then begin spontaneous fermentation with native yeasts in clay jars. The wine remains there on its lees for 6 months. Finally, the wine is bottled without filtering or stabilising.
