Saíñas O Boliño is a red wine made from the Mencía and Garnacha varieties as well as some other local red grapes, by the Saíñas winery in the D.O. Ribeira Sacra, in Galicia, Spain.

To make the Saíñas O Boliño wine, the clusters ferment with the stems in open 1000-litre vats with native yeasts and a 30-day maceration. The resulting wine is racked to undergo malolactic fermentation and then it ages in 400-litre oak barrels for around 10 months.

The Saíñas winery started as a hobby and was founded in 1992 in the town of Ferreira de Pantón. They mainly make wines using Galicia’s native variety, the Mencía. Their vineyards lie in an area where viticulture is considered heroic because the plots sit on a slope with a 30% gradient which makes cultivation and harvesting extremely complicated. But the landscapes are amazing and the wines, like this Saíñas O Boliño, are a true reflection of the environment and have their own personality.

Ribeira Sacra is one of those magical places that you just have to visit to truly experience it. The vertiginous terraces rise steep on the banks of the river Sil, making the terrain difficult to work on that it requires complete manual work and labor on the vineyards. The agriculture carried out here is aptly referred to as ‘heroic agriculture’, due to the hard work carried out cultivating the land. Both red and white wines are produced in the Ribeira Sacra. The red wines are mostly made with the Mencía variety, defined by their expressive and elegant character with a good acidity. The Ribeira Sacra white wines are principally made with the Godello and Albariño varieties. They are wines with a good volume in the mouth, aromatic and fruity. The Ribeira Sacra wines are often come in very limited productions, are of high quality and with notable personalities.
