Rotem & Mounir Saouma is a winery in the Rhone Valley that takes the name of the couple that runs it. Both studied viticulture and oenology and their first business in the world of wine was in 1999 with the creation of the micro-negociant Lucien Le Moine for marketing Burgundy wines. They currently cultivate their 15 acres in Châteauneuf-du-Pape and another 22 in Côtes du Rhône organically.
The vineyards for Rotem & Mounir Saouma Inopia Blanc have a high planting density, designed so that the yield per plant is low but of a high quality. The plots’ soils are of shallow clay with sandstone and stones of alluvial origin.
Rotem & Mounir Saouma Inopia Blanc is made by pressing the whole bunches just when they arrive in the cellar. The must is fermented and the wine aged for 18 months, all in 500 litre barrels and cement tanks. During the process the wine is not pumped, nor is it filtered or clarified before bottling.
