Ronco Severo Ribolla Gialla is an orange wine produced by Ronco Severo with the Ribolla Gialla variety in the Friuli-Venezia Giulia region (Italy) within the IGT Venezia Giulia.
Ronco Severo is run by Stefano Novello, a non-interventionist winegrower located in a unique territory in the Italian region of Collio Friulano. Through his work, he rethinks the local tradition in a modern and high quality way and produces natural wines that are sincere, genuine and rustic.
Ronco Severo Ribolla Gialla comes from a 1.2 hectare vineyard. These terroirs lie 150 metres above sea level and are characterised by a “ponca” soil, a Friulian term for marl soils. The vines are cultivated using organic agriculture and no chemical products. The harvest is carried out manually at the optimum point of ripeness.
Ronco Severo Ribolla Gialla ferments with the skins in conical oak vats for 60 days with native yeasts and no temperature control. It is then pressed and the resulting must spends 24 months in 30hl Slavonia conical vats in contact with the lees. Finally the wine is left to age for a further 12 months in the same barrels and is bottled during the waning moon without being filtered or refined.
Made using the ancient method, Ronco Severo Ribolla Gialla is a pure and genuine expression of Collio Friulano. An orange wine with a great personality.
